Czech Potato Soup – Bramboračka

This recipe is my mom’s Czech potato soupBramboračka.  She’s been gone for many years and each time I eat this I’m filled with wonderful memories of her.  Camden absolutely loves this soup and I’m glad!  It’s a great way for him to get his vegetables and to taste a little of his Czech heritage.  The picture shows the soup served in beautiful Czech Zwiebelmuster porcelain made by the company my father once worked for.

1 cup chopped fresh mushrooms
 
2 stalks of celery – chopped
 
1/2 cup baby carrots – chopped
1 small onion – chopped
1/4 – 1/2 teaspoon caraway seeds
1/8 teaspoon marjoram
1 1/2 teaspoon salt
1/2 teaspoon pepper
 
7 cups of water
 
4-5 medium potatoes – peeled and cut into cubes
  
4 tablespoons butter
1 teaspoon oil
 
1/4 cup flour mixed with cold water
1 Knorr Homestyle Beef Stock Concentrated Cup
 
fresh parsley

  1. Melt butter in large pot over medium heat.  Add oil.  Stir in onions and brown them. 
  2. Add flour/water mixture to the pot and stir well.
  3. Slowly pour in 7 cups of water while mixing with a whisk until smooth.   Add dry spices, salt, and pepper.  Bring it to a boil.
  4. Add the concentrated beef stock to the boiling liquid.  Stir until dissolved.
  5. Add vegetables and allow to boil.  Reduce heat and simmer for approximately 1 hour until they are tender.
  6. More salt and/or pepper may be added if desired.
  7. Garnish the soup with fresh parsley and enjoy!  This recipe serves 4.
  8. You can vary the types and/or amounts of the ingredients to fit your taste.  Use turnips, cabbage, leeks, and different spices (i.e. garlic).
