Cinnamon Streusel Coffee Cake

Cinnamon Streusel Coffee Cake

Cake Ingredients

1 boxed yellow cake mix
4 eggs
1/3 cup oil
1 cup sour cream
1/4 cup water

Streusel Filling

3 tablespoons melted (cooled) butter
1/4 cup packed light brown sugar
1/2 cup all-purpose flour
2 teaspoons ground cinnamon
1/4 teaspoon salt
3/4 chopped walnuts or pecans (optional)

Combine all the streusel filling ingredients except nuts in a small bowl and blend with a spoon until it resembles a crumbly mixture.  Stir in nuts if desired.
Cake Glaze

1/4 cup melted butter
2 cups powdered sugar
1 teaspoon vanilla
2 tablespoons milk

Combine the glaze ingredients in a medium bowl with a spoon.  If the glaze becomes too thick to drizzle, reheat in a microwave.
  1. Spray a coffee cake pan using non stick cooking spray or grease/flour it.  I use the following Nordic Ware non stick coffee cake pan, sprayed lightly just to be safe:
  2. Preheat oven to 350oF.
  3. Prepare the streusel filling.  Set aside.
  4. Prepare the cake batter.  Combine all ingredients in a large bowl and mix on low speed with an electric mixer for 30 seconds.  Increase the speed to medium and mix for 2 minutes.
  5. Spread half of the cake batter into the cake pan.
  6. Evenly sprinkle half of the streusel filling on top of the batter.
  7. Spread the remaining cake batter on top of the streusel filling from the previous step.
  8. Use a butter knife and carefully cut through the batter/streusel in the cake pan.  This will create some swirling of the inner streusel filling.
  9. Evenly sprinkle the remaining streusel filling on top of the batter.
  10. Bake for approximately 40-45 minutes in a 350oF oven until a toothpick inserted near the center comes out clean.  The cake will pull away from the sides of the pan when done.
  11. Allow the cake to cool on a wire rack for approximately 15-20 minutes in the pan.  Then transfer it, streusel side up, onto a serving plate.
  12. Prepare the cake glaze.  Drizzle the glaze onto the cake using a spoon.  I use approximately half of the glaze and refrigerate the rest for another cake.
