Corn Bread

This is my all-time favorite recipe for corn bread and I’ve made this for so many years.  It tastes so much better than boxed corn bread mixes and is just about as easy.  This is a sweeter flavored corn bread.  Enjoy!

1 cup milk
1/4 cup melted butter
1 large egg
1 1/4 cups yellow cornmeal
1 cup all-purpose flour
1/2 cup sugar
1 tablespoon baking powder

1/2 teaspoon salt

  1. Preheat oven to 400oF.
  2. Mix milk, melted butter, and egg in a large bowl until well blended.
  3. Add remaining ingredients to the bowl and blend just until moistened.  The mixture will be lumpy and thick.
  4. Pour (or scrape) the batter into a well-greased (or well-sprayed) 9 x 1 1/2 inch square baking pan.
  5. Bake for 20 to 25 minutes until golden brown and knife inserted into the center comes out clean.
