Mini Cheesecakes

I love cheesecake.  I love Czech koláče with cream cheese filling.  I love this dessert and it is so easy to make.  Top your mini cheesecakes with strawberries, raspberries, or whatever your heart desires!

Cheesecake Ingredients
Two 8 ounce packages of cream cheese (softened)
2/3 cup sugar
2 eggs
2 tsp vanilla extract
1/2 tsp almond extract

Crust Ingredients
6 full size graham crackers
1/4 cup melted butter

  1. Combine the two packages of cream cheese with the sugar.  Mix well on medium speed until light and fluffy.
  2. Add eggs and extracts.  Mix on medium speed until well blended.  Set aside.
  3. Place the graham crackers in a mixing bowl.  Mix on low to medium speed until crushed.  Add the melted butter and mix well.
  4. Place liners into a cupcake pan.  Spoon in the crushed graham crackers to cover the bottoms of liners (about 1/4 inch).  Use the bottom of a clean glass to press the crushed graham crackers into a flat crust.  I used the bottom of a small juice glass.
  5. Fill the remaining portion of the cupcake liner with the cream cheese filling.  Fill until you reach approximately 1/4 inch from the top of the liner.
  6. Bake at 325oF for 22-24 minutes until the edges are slightly brown.
  7. Cool the mini cheesecakes in the cupcake pan on a wire rack.  The centers will sink while cooling.
  8. Refrigerate for 3-4 hours or overnight.
  9. I was able to make 15 mini cheesecakes.  Enjoy!
